Olga Maria Aguirre has been producing coffee for more than a decade. She first got involved in coffee because of some friends recommended it and gave her some seeds which she planted on the farm. As the coffee grew, she learned about coffee. For Olga, been able to see her son Felipe grow older on the farm and holding a delicious cup of coffee is the best thing that has ever happened to her. Felipe studied agronomy and he is in charge of overseeing and carrying out the farm activities and leading the people that they hire during the harvest. In 2018 Olga and Felipe decided to embark in the journey of specialty coffee. In his studies, Felipe learned that there was another way of producing coffee, one that was more profitable, are better known in the market, and are different from the rest. Felipe implemented what he had learned on the farm, and that was when it all changed. They have trained the people who work for them during the harvest, being able to strengthen their labor, and improve the quality of their coffee. Since then, they have seen how the doors have opened for them and their coffee. Today, Olga Maria is proud that they are a role model for their community, that her coffee is very well-known, not only in their municipality, but also in the world. “Besides, working with Caravela have been different. We have improved our processes and infrastructure, always looking to improve the quality. Most importantly, we have received much better prices, and we're keen to continue improving the quality to continue improving the prices.” Says Olga. Olga and Felipe harvest their coffee when it's perfectly ripe, and they de-pulp the cherries with water. After doing a floating of the coffee, they ferment it inside sealed bins for 96 hours. When finished the fermentation process, they dry the coffee homogeneously on covered parabolic patios, constantly moving it. After two weeks of drying, the coffee is ready to pack and take to Ibague.

Shipping
We roast on Monday and pack orders on Tuesday. Orders are shipped any day if stock is available. If your order is placed after 7am Monday we cannot guarantee that we will have stock available. In this case, the coffee will be sent the following Tuesday.
Local Pickup
Instructions will be sent via email when you place your order. You will be notified when your coffee is ready for pickup, it is available to pickup 24/7. Please ensure you double check your name and order number before taking your order from the shelf.
