This is our first release from Gabriel Bravo and his farm, Finca Los Pinos, in Unión Buena Vista, Chiapas.
Gabriel has grown coffee for more than 30 years. In recent seasons, he and his family have shifted their focus toward specialty production, refining their picking and processing to lift quality in the cup.
Finca Los Pinos is family run. Harvest is led by Gabriel, with his wife and children closely involved throughout the season. Alongside several varieties on the farm, this lot is Bourbon, a cultivar known for clarity and structure.
In the cup, expect red apple acidity, milk chocolate depth, and a honeycomb sweetness. Bright, composed, and silky.

Shipping
We roast on Monday and pack orders on Tuesday. Orders are shipped any day if stock is available. If your order is placed after 7am Monday we cannot guarantee that we will have stock available. In this case, the coffee will be sent the following Tuesday.
Local Pickup
Instructions will be sent via email when you place your order. You will be notified when your coffee is ready for pickup, it is available to pickup 24/7. Please ensure you double check your name and order number before taking your order from the shelf.
