High in the Sierra Mazateca of Oaxaca, Panfilo Cruz tends a small family farm that’s been shaped by generations of hard-earned knowledge. His work leans on tradition: selective hand-picking, fully washed processing, long cool ferments suited to the mountain climate, and slow, steady drying on raised beds. It’s meticulous, patient farming — the kind you only learn by growing up in it.
Panfilo is part of the Mazateca Indigenous community and still speaks Mazateco, a thread that ties his daily work to the culture and land he’s grown up with. His approach is deliberately low-intervention and deeply respectful of place, with an emphasis on preserving the farming practices and ecological balance that his family has relied on for decades.

Shipping
We roast on Monday and pack orders on Tuesday. Orders are shipped any day if stock is available. If your order is placed after 7am Monday we cannot guarantee that we will have stock available. In this case, the coffee will be sent the following Tuesday.
Local Pickup
Instructions will be sent via email when you place your order. You will be notified when your coffee is ready for pickup, it is available to pickup 24/7. Please ensure you double check your name and order number before taking your order from the shelf.
