Rachia is the work of more than 350 smallholder farmers in Yirgacheffe, all delivering their ripe cherries to the Gizat Washing Station in Idido. During harvest the place hums — constant arrivals from nearby hills, lots of hands at work, and a real sense of shared effort that keeps the station moving smoothly day after day.
Processing follows a careful, low-tech rhythm. Cherries are hand-sorted on arrival, then laid out on raised beds to dry for 15–20 days. The beds are built for consistency: plenty of airflow, shade when the sun gets too fierce, and workers turning the cherries often to keep the drying even. It’s simple on paper, but it takes real attention to nail it.
Once the fruit reaches the right moisture level, it’s moved to a local warehouse for storage and prep. There it’s sorted again — by colour, density, and screen size — ensuring the final lots stay uniform and clean before export.
Rachia represents what makes Ethiopia’s coffee landscape so remarkable: hundreds of growers, each tending tiny plots, all contributing to a collective process that elevates the work of the whole community.

Shipping
We roast on Monday and pack orders on Tuesday. Orders are shipped any day if stock is available. If your order is placed after 7am Monday we cannot guarantee that we will have stock available. In this case, the coffee will be sent the following Tuesday.
Local Pickup
Instructions will be sent via email when you place your order. You will be notified when your coffee is ready for pickup, it is available to pickup 24/7. Please ensure you double check your name and order number before taking your order from the shelf.
